Renowned is the Sifnian revithada, a traditional Sunday dish slow-baked for many hours in a clay vessel called a skepastaria until it develops a velvety texture and rich flavor.

Mastelo

One of the most characteristic dishes is mastelo, young goat or lamb rinsed only with local red wine, scented with plenty of dill, set on vine twigs, and baked in a wood-fired oven in a special ceramic pot (the "mastelo").
