Spring is in the air and Rawbata has set out tables in the square and is waiting for us.
Chronis Damalas often suggests different dishes, created from the greens, herbs, and fish he selects at the markets. We can’t help but start with the signature tarama, with red shrimp and a spicy dressing, and share the dumplings, in which chef Chronis Damalas, with exceptional finesse, combines fresh nettle, zucchini, and feta cream.
Next, the spring scallop brings unique «colors and aromas» to the table. A distinctive carpaccio with strawberry, tomato, and passion fruit makes the difference! Whether the group orders the now-iconic tuna tataki or chooses the «one bite and all is forgiven» skirt steak on the robata with eggplant, chili, and basil, the choices are always plentiful.
